Tonight’s meal was the 2nd attempt at the linked recipe. We made entirely too much last time (due to having picked out the largest spaghetti squash) and we’re ready to add more basil and less lemon.
Paleo Spaghetti Squash and Pesto Chicken
This is all part of going Paleo! Adam and I began this almost 2 months ago. I will tell you that on days I do eat foods not part of the Paleo plan, I feel like garbage…! Fast food, fried foods, ice cream, pizza, and even beer takes its toll after the “eat whatever” weekends. Paleo takes out sugars, sodium, carbs, and dairy, leaving us with fruits, veggies, meat, and a whole lot of water in take. Accompanied with yoga a few times a week, we’re feeling healthier and wiser (more on yoga later this month).

My favorite part of this whole process is that you only have to use a wooden spoon, 1 frying pan, and 1 baking pan. Use foil on the baking pan and really, you only have to clean up the frying pan, spoon, and what you used to eat it from.
For lunch we had shawarma pitas along with a few glasses of water. Time for some watermelon as dessert and possibly some popcorn, popped in coconut oil (thanks for the idea Aunt Cheri) and a sprinkle of salt.
Yoga tomorrow morning and back into the groove of healthy living.
